Juicy honey lime marinated chicken grilled or baked to perfection and topped with a fresh mango salsa for a sweet, zesty, and slightly spicy flavor. A healthy, gluten-free meal perfect for weeknight dinners or summer cookouts.
Ingredients
- For the Honey Lime Chicken:
- 2 large boneless skinless chicken breasts (or 4 small)
- 2 tablespoons honey
- Juice and zest of 2 limes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the Mango Salsa:
- 1 large ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, seeded and minced (optional)
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
1. In a small bowl whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, paprika, salt, and pepper.
2. Place the chicken in a dish or resealable bag and pour the marinade over the chicken, coating well.
3. Marinate for at least 30 minutes or up to 12 hours in the refrigerator for deeper flavor.
4. In a bowl combine diced mango, red onion, jalapeño, and cilantro.
5. Add lime juice, season with salt and pepper, and mix well. Let the salsa sit for 10–15 minutes for flavors to blend.
6. Preheat a grill or skillet over medium-high heat.
7. Cook the chicken for about 5–7 minutes per side until the internal temperature reaches 165°F (75°C).
8. Alternatively bake the chicken in a 400°F (200°C) oven for 20–25 minutes until fully cooked.
9. Let the chicken rest for 5 minutes, then slice.
10. Top the chicken with fresh mango salsa and serve immediately with rice, salad, quinoa, or tortillas.
Notes
For extra flavor, marinate the chicken overnight.
If mango is not in season, pineapple or peach can be substituted.
Adjust jalapeño amount depending on your preferred spice level.
This dish pairs well with cilantro rice, grilled vegetables, or warm tortillas.
