Description

Ingredients

  • 4 medium beets, roasted and sliced
  • 8 oz burrata cheese
  • 1/4 cup pine nuts, toasted
  • 4 cups mixed greens
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions

1. Preheat oven to 400°F. Wrap beets in foil and roast for 45-60 minutes until tender.

2. Let the beets cool, then peel and slice them.

3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.

4. Arrange mixed greens on a serving platter.
