Description

A hearty and comforting American one-pot classic, this slow-cooked casserole layers thinly sliced russet potatoes with a savory, protein-rich blend of lean ground beef and turkey-based Italian sausage. Smothered in a velvety garlic-infused cream of chicken sauce, this meal is perfect for busy weeknights. The slow cooking process allows the potatoes to soak up all the aromatic spices and juices, resulting in a rich, rustic dinner that is as convenient as it is satisfying for the whole family.

Ingredients

Scale

4 lbs russet potatoes, scrubbed and sliced into 1/4 inch rounds
1 lb lean ground beef
1 lb beef or turkey-based Italian sausage (pork-free)
1 medium sweet onion, finely diced
4 cloves garlic, minced
2 cans cream of chicken soup
1/2 cup chicken broth or water
1 tsp dried oregano
Salt and black pepper to taste

Instructions

In a large skillet over medium-high heat, brown the ground beef and turkey Italian sausage until fully cooked.
Drain any excess fat from the skillet and set the meat mixture aside.
In a small bowl, whisk together the cream of chicken soup, chicken broth, minced garlic, and oregano until smooth.
Grease the inside of your crockpot lightly with non-stick spray or butter.
Place a layer of potato slices at the bottom of the crockpot.
Spread a portion of the meat mixture over the potatoes.
Pour a small amount of the soup sauce over the meat layer.
Repeat the layering process until all ingredients are used, finishing with a layer of potatoes and sauce on top.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until potatoes are fork-tender.
Serve warm, ensuring each scoop gets a bit of the creamy sauce and meat.

Notes

Ensure the Italian sausage is explicitly labeled as beef or turkey to keep this recipe free of pork. For a creamier result, you can add 1/2 cup of shredded cheddar cheese during the last 30 minutes of cooking. Leftovers store well in an airtight container in the refrigerator for up to 3 days.
