Description
A refreshing and vibrant watermelon salad with tangy lime-marinated onions, crisp cucumber, creamy feta, and fresh cilantro.
Ingredients
- 1 cup red onion, thinly sliced
- 3 tbsp fresh lime juice (about 1 1/2 limes)
- 8 oz feta cheese, crumbled
- 1/2 cup fresh cilantro, chopped
- 3 cups English cucumber, diced into 1/2-inch pieces
- 15 cups watermelon, seeded and cut into 1-inch cubes
- Sea salt, to taste
- Freshly cracked black pepper, to taste
Instructions
1. Slice the red onion and place it in a small bowl. Pour lime juice over it and let it marinate while preparing the rest of the salad.
2. In a large bowl, gently combine watermelon, cucumber, feta cheese, and chopped cilantro.
3. Season the mixture with freshly cracked black pepper and toss gently to combine.
4. Add the marinated red onion along with its juices to the salad and mix lightly.
5. Just before serving, season with sea salt to taste.
6. Serve immediately and enjoy this refreshing salad.
Notes
For best flavor, use freshly squeezed lime juice.
Add salt just before serving to prevent the watermelon from releasing too much juice.
You can chill the salad for 15–20 minutes before serving for extra refreshment.
Optional additions include mint leaves or a drizzle of balsamic glaze.
