Description
Easy grilled zucchini cooked on a Blackstone griddle with avocado oil, garlic, and Italian herbs. This quick side dish is lightly crisp on the outside, tender inside, and packed with simple fresh flavor.
Ingredients
- 2 medium zucchini (about 8 inches long), sliced into 2-inch pieces
- 1/4 cup avocado oil (or other high smoke point oil)
- 2 garlic cloves, finely minced
- 1 tsp Italian herb blend
- 1/2 tsp coarse salt
- 1/8 tsp ground black pepper
Instructions
1. Wash the zucchini thoroughly under cold running water to remove any dirt.
2. Slice each zucchini into evenly sized 2-inch pieces so they cook at the same rate.
3. Place the zucchini pieces into a large resealable bag or mixing bowl.
4. Add avocado oil, minced garlic, Italian herb blend, coarse salt, and ground black pepper.
5. Seal the bag or toss the bowl ingredients until the zucchini is evenly coated with oil and seasonings.
6. Preheat a Blackstone grill or large skillet to medium-high heat.
7. Spread the seasoned zucchini in a single layer on the hot grill surface.
8. Cook for 2–3 minutes, then flip the pieces and cook another 1–2 minutes until the zucchini is tender but still slightly firm (al dente).
Notes
Cutting the zucchini into uniform pieces helps them cook evenly on the griddle.
Do not overcrowd the grill surface or the zucchini may steam instead of lightly searing.
For extra flavor, finish with grated parmesan cheese, a squeeze of lemon juice, or a sprinkle of fresh herbs.
