Description

This comforting Fall Potluck Casserole combines savory lean ground turkey, tender cubes of butternut squash, and hearty hash brown potatoes in a creamy, parmesan-infused sauce. It is the perfect one-pan meal for chilly evenings or busy gatherings, balancing the natural sweetness of autumn produce with satisfying protein. Easy to assemble and even easier to share, this wholesome bake is designed to bring the warmth of a traditional harvest kitchen to your modern table.

Ingredients

Scale

1 tablespoon butter
1/2 large sweet onion, diced
2 teaspoons minced garlic
1 pound ground turkey
1 teaspoon kosher salt
3 cups butternut squash, peeled and cubed
2 cups frozen hash brown potatoes
2 cups fresh baby spinach
1/2 cup parmesan cheese, grated
1 cup vegetable broth
1/2 teaspoon poultry seasoning
1/4 teaspoon black pepper

Instructions

Preheat your oven to 375°F (190°C) and lightly grease a 9×13 baking dish.
In a large skillet, melt the butter over medium heat and sauté the onion until translucent.
Add the ground turkey to the skillet, seasoning with salt, pepper, and poultry seasoning; cook until browned.
Stir in the garlic and cook for one minute until fragrant.
In a large mixing bowl, combine the cooked turkey mixture, cubed butternut squash, hash browns, and spinach.
Pour the vegetable broth over the mixture and fold in half of the parmesan cheese.
Transfer the mixture to the prepared baking dish and spread evenly.
Cover with foil and bake for 30 minutes, then remove the foil, sprinkle with the remaining parmesan, and bake for an additional 15 minutes until the squash is tender and the top is golden.

Notes

You can prep the turkey and squash mixture the night before and keep it in the refrigerator until ready to bake. If you prefer extra creaminess, stir in a splash of heavy cream or half-and-half before baking. Store leftovers in an airtight container for up to 3 days.
