Description
These Greek Chicken Skewers are packed with Mediterranean flavor and feature juicy, tender chicken thanks to a simple yogurt-based marinade.
Ingredients
- 3 Tablespoons plain Greek yogurt
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon dried oregano
- 2 teaspoons red wine vinegar
- 4 cloves garlic, smashed but whole
- Juice of 1 lemon
- 1/4 teaspoon kosher salt
- 8–10 cracks fresh-ground black pepper
- 1 and 1/4 pounds chicken tenders
Instructions
1. Combine yogurt, olive oil, oregano, vinegar, garlic, lemon juice, salt, and pepper in a medium bowl. Whisk well to combine. Add chicken and turn to evenly coat with the marinade. Cover and refrigerate for at least 30 minutes and up to 4 hours.
2. When ready to cook, remove the chicken and thread each tender onto a skewer. Discard the marinade.
3. Warm a grill or grill pan over medium-high heat and lightly coat with olive oil. Cook skewers for 4-6 minutes per side until golden brown and the internal temperature reaches 165 degrees F.
4. Serve with tzatziki, lemon wedges, and fresh parsley or dill as desired.
Notes
To cook without a grill: Marinate chicken as directed, then cook on a grill pan or skillet drizzled with olive oil over medium-high heat. Or bake at 350 degrees F until the chicken reaches 165 degrees F internally.
Storage & Reheating: Let leftovers cool completely, then refrigerate for up to 5 days. Reheat in the oven or microwave using 50% power to help prevent drying out.
Serve with tzatziki sauce, lemon wedges, and fresh herbs for extra flavor.
