Description
A refreshing and creamy Hawaiian Chicken Salad packed with sweet pineapple, tender chicken, and crisp vegetables for a tropical twist.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup pineapple chunks, drained
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1/2 cup celery, diced
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
1. Shred the cooked chicken into bite-sized pieces and place in a large mixing bowl.
2. Dice the red bell pepper, slice the green onions, and dice the celery, then add them to the bowl with the chicken.
3. In a separate bowl, whisk together the Greek yogurt, mayonnaise, honey, apple cider vinegar, and garlic powder until smooth.
4. Season the dressing with salt and pepper to taste.
5. Pour the dressing over the chicken and vegetable mixture and stir gently until evenly coated.
6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
7. Serve chilled over fresh lettuce leaves and enjoy.
Notes
Use rotisserie chicken for convenience and extra flavor.
Fresh pineapple can be used for a brighter taste, but canned works well too.
Adjust sweetness by adding more or less honey to your preference.
Chill longer for deeper flavor development.
Serve as a sandwich filling or wrap for variety.
