Description
A fresh and protein-packed Greek salad with juicy chicken, crisp vegetables, tangy feta, and a homemade red wine vinaigrette.
Ingredients
- 6 cups chopped lettuce
- 1 (8 oz) Greek marinated chicken breast
- 1/4 cup Kalamata olives, pitted
- 1/4 cup crumbled feta cheese
- 2 cups sliced tomatoes
- 1 cup sliced cucumber
- 1/2 tsp black pepper
- 1 tsp sugar
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 tsp kosher salt
- 2 tsp dried oregano
- 1 garlic clove, minced
Instructions
1. Add chopped lettuce to a large serving bowl or divide into two individual bowls.
2. Top with sliced chicken, tomatoes, cucumber, olives, and crumbled feta cheese.
3. In a small jar, combine olive oil, red wine vinegar, minced garlic, oregano, sugar, salt, and pepper.
4. Seal the jar and shake well until the dressing is fully emulsified.
5. Taste and adjust seasoning as needed.
6. Drizzle dressing over the salad and toss gently to combine.
7. Serve immediately and enjoy.
Notes
Use high-quality feta for the best creamy texture and flavor.
Freshly minced garlic enhances the dressing significantly.
You can substitute grilled chicken if Greek marinated chicken is unavailable.
