Ingredients
- 1 cup orzo pasta
- 1 lb shrimp (peeled and deveined)
- 4 cups low-sodium chicken broth
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- 1/2 cup fresh parsley (chopped)
- 2 tbsp lemon juice
Instructions
1. Heat olive oil in a large pot over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
2. Add shrimp and cook until pink and opaque, about 3-4 minutes.
3. Stir in orzo pasta and chicken broth. Bring to a gentle boil, then reduce heat and simmer for about 10 minutes until orzo is tender.
4. Remove from heat and stir in lemon juice and chopped parsley.
5. Serve warm, garnished with additional parsley if desired.
Notes
Do not overcook the shrimp to keep them tender and juicy.
You can substitute vegetable broth for a lighter flavor.
Add a pinch of red pepper flakes for a bit of heat.
