Description

Pineapple Chicken and Rice is a sweet and savory dish combining tender chicken, juicy pineapple, and fluffy jasmine rice in a colorful, flavorful meal that’s perfect for a quick and satisfying dinner.


Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

1. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook until golden brown and fully cooked. Remove the chicken and set it aside.

2. In the same skillet, sauté the onion, garlic, and red bell pepper until softened.

3. Add the cubed pineapple to the skillet and cook for about 2 minutes.

4. Stir in the jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil.

5. Reduce the heat to low, cover, and simmer for 18–20 minutes, or until the rice is tender and the liquid is absorbed.

6. Return the cooked chicken to the skillet and stir well to combine all the flavors.

7. Serve warm, garnished with sliced green onions and sesame seeds.


Notes

For extra flavor, marinate the chicken in soy sauce and ginger for 15 minutes before cooking.

Fresh pineapple provides the best flavor, but canned pineapple chunks can also be used if drained well.

Add a splash of lime juice or a drizzle of sesame oil before serving for additional brightness.
