Ingredients
4–5 Bone-In Chicken Thighs (skin-on)
2 tsp Onion Powder
2 tsp Garlic Powder
1 tsp Smoked Paprika
1 tsp Fresh Thyme
2 tbsps Fresh Rosemary, chopped
Salt and Pepper
1 Red Onion, thinly sliced
1–2 Honeycrisp Apples, sliced into wedges
4 tbsps Salted Butter
3/4 cup Apple Cider
1/2 cup Chicken Broth
2 tbsps Dijon Mustard
3 cloves Garlic, diced finely
2–3 Whole Rosemary Sprigs
2 tbsps Olive Oil
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken thighs dry and season both sides with salt, pepper, onion powder, garlic powder, smoked paprika, and fresh thyme.
Heat olive oil in a large oven-safe skillet over medium-high heat and sear the chicken skin-side down until golden brown, then flip and remove from the pan.
Add the red onion and apple wedges to the skillet, sautéing until slightly softened.
Return the chicken to the skillet, tucking the pieces among the apples and onions.
Sprinkle with chopped rosemary and garnish with whole sprigs.
Roast in the preheated oven for 20-25 minutes or until the chicken is cooked through.
Remove the chicken and fruit to a platter; place the skillet on the stovetop over medium heat for the sauce.
Whisk in the apple cider, chicken broth, Dijon mustard, and diced garlic, scraping up the browned bits, and simmer until slightly thickened.
Pour the finished glaze over the chicken and apples to serve.

Use high-quality chicken broth to ensure the sauce has good depth. If you prefer a thicker sauce, you can whisk in a teaspoon of cornstarch mixed with a splash of water before simmering. Store leftovers in an airtight container for up to 3 days.
