Description

A fresh and delicious summer fruit salad with watermelon, berries, and cherries tossed in a light honey lemon dressing.


Ingredients

  • 5 cups seedless watermelon, rind removed and chopped into 1/2 to 1-inch cubes
  • 1 1/2 cups strawberries, quartered
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup cherries, pitted and halved
  • 1/4 cup fresh mint, chopped
  • 1 teaspoon lemon zest
  • 2 lemons, juiced
  • 1/4 cup honey or agave

Instructions

1. Combine watermelon, strawberries, blueberries, blackberries, cherries, mint, and lemon zest in a large mixing bowl

2. Whisk together the lemon juice and honey until fully blended

3. Drizzle the dressing over the fruit and gently toss to coat evenly

4. Cover with plastic wrap and refrigerate for at least 1 hour before serving

5. Serve chilled and store leftovers covered in the refrigerator for up to 4 days

Fruit salad can be prepared ahead of time and stored in the refrigerator for up to 4 days
